Vegan chef, Lindsay Scoby Morgan shows us how to prepare delicious cauliflower pizza crust. Oh so yummy for your tummy! Shhh… Don’t tell your kids it’s made with cauliflower… they’ll love it.
Cauliflower Pizza Crust
3 cups ground cauliflower
1 cup & 2 T almond flour
4.5 chia eggs (1 tbsp chia seeds : ¼ cup warm water = 1 egg)
4 T nutritional yeast
1 t sea salt
1 t dried rosemary or herbs of your choice (oregano & basil are nice)
1 t garlic powder
freshly ground pepper to taste
Preheat the oven to 450° and line a large baking sheet (or 2 baking sheets) with parchment paper or foil. Mix the chia eggs and let them set for at least 15 minutes. Place cauliflower in food process or and process until it resembles a rice texture and you have 3 cups. In a large bowl, combine cauliflower and all of the remaining ingredients ; mixing together until a batter forms. It will be sticky and mushy, but should resemble dough. Portion the dough onto the baking sheets, using from about 3/4 – 1 cup of dough per pizza. Using your hands to shape dough into little pies, build up the crusts a bit. Place them in the oven on the middle rack, without toppings , for 15-20 minutes.
Remove pizza crusts from the oven and add sauce and toppings. Return the pizza to the over (top rack this time) and bake for an additional 10-15 . The crusts should be golden brown and irresistible-looking.
(makes approx. six 6″ crusts or 2 larger crusts)
